Honey Cake step by step
- You can use any kind of pan, but a loaf pan is probably best..
- Preheat oven to 300°F..
- Grease or spray a 9 X 5 X 3 inch loaf pan with a non stick cooking spray and set aside..
- In a large bowl, mix together eggs, agave nectar, honey and oil..
- Use a mixer or beat intensely by hand..
- Mix in the coffee mix and orange juice concentrate..
- Add the flour, baking soda, cinnamon and any optional spices..
- Mix on low speed until blended..
- Increase the speed for 1 minute or if mixing by hand, increase hand beating speed a bit toward the end..
- Pour batter into the pan and bake at 300°F for about 65 minutes or until a toothpick or fork comes out clean..
- Cool the cake before serving..
- It will be moist but that doesn't mean it's not done. You never want a honey cake to be dry..
